Our Party Cake

Over the years, we have experimented with a lot of different types of recipes in order to find the best cake for our taste buds.   We use this recipe for birthday parties, play dates, or any kind of event or day that we need extra sweetness. This led to this beauty of a creation:

 

Peanut, dairy, egg and sesame free

But every bite more delicious 

for at home or any kind of party. 

 

Ingredients: 

2.5 cups of flour

1.5 cups of sugar

2 TBSP  baking powder

3/4 tsp salt

1/2 c + 1/8 c oil (we typically use coconut)

1 c milk (coconut or our preferred protein nut milk if tree allergies are not an issue)

2 TBSP vanilla extract

1 C organic, unsweetened applesauce

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix flour, sugar, baking powder, salt and oil in a bowl.
  3. Mix in milk, applesauce, and vanilla.
  4. Pour batter into a greased cake pan or greased cupcake liners/  (use oil for greasing or a butter alternative like Earth’s Balance.
  5. Bake cupcakes for 20 minutes or cake for 35 minutes.
  6. Test will a toothpick.
  7. Cool.
  8. Decorate as you wish!

 

We promise to not lick the spoon … but we can’t promise to not eat any before the party...

Two years later, we are still using the recipe. Just mixing it up a bit…

Honey Oat Bites

I love granola bars.   Over the years, I have gone through phases of several brands.   However, the more and more I learn about food; the more and more I want to create our own version.   A very close friend of mine shared a similar recipe with us back in March of 2018; however, it used peanut butter.   Therefore, we switched it up and made it safe for us. It is a hit not only with everyone in our house, including our picky son, but also a huge favorite for anyone who visits.

 

Ingredients:

1 cup old fashioned oats

1/2 cup of almond butter (We use Barney’s almond butter because it is free of peanut contamination, unlike many other brands.)

2/3 Cup unsweetened coconut flakes (toasted at 350 degrees for 6 minutes, flip them half way through)

1/2 cup chia seeds or grounded flax

1/3 cup raw honey

1/4 cup Enjoy Life mini chocolate chips

1 teaspoon vanilla extract

Directions:

  1. Combine all ingredients.

  2. Chill for 30 minutes

  3. Roll into balls

  4. Store in an airtight container for up to a week.

  5. Enjoy!

Notes:

  • Substitute any other nut butter including peanut butter if safe for your family.
  • For a protein boost, add in some protein powder.

These are a great way to satisfy that sweet tooth and get some much needed energy along the way.

Shake It Again

I am all about the green shakes.   I am all about pouring as much nutrition into a burst of morning energy.   And while bananas usually steal the show of most of my shakes, this one has a totally different spin to it.

So here you go again…

Ingredients

  • 2 tablespoons almond butter (Note: almond butter pictured is unsafe for peanut allergies)
  • 1 cup green grapes or 1 cup chopped mango (although grapes work best)
  • 2 pitted dates
  • 1 cup chopped zucchini
  • 1 cup spinach or kale
  • 1 1/4 cup almond milk or protein nut milk for added protein (almond, cashew, pea)
  • 2 Tbsp lemon juice
  • 2 Tbsp flax seeds
  • 1 Tbsp chia seeds
  • Handful of ice

*Note: ingredients can be modified for specific allergies.

Mix together in the Vitamix and enjoy! This is one my husband even loves (the grape version)… a great way to sneak in some veggies … and empower you to get after that mess once and for all…well, maybe tomorrow.

Coffee is Not My Best Friend

I used to. I used to love it. I use to crave it! But over the years, I learned caffeine and I don’t mix so that bittersweet friendship needed to go…

In middle school, I was tall. In fact, I was almost my exact height now. Five feet six inches at the age of twelve, I was as tall as a few of the boys and towered over most of the other ones including my brother just a year younger than me.

The problem to my “middle school” Jen was that I liked the short boys, but was way too insecure with myself to see that…that was totally okay.. that my height was part of what made me beautiful. I just wasn’t ready to stand tall around anyone…So of course the next best solution at that age was…

(I obviously do not encourage this behavior at all, but can’t help to laugh at myself looking back now. I also wanted bigger breasts and tried some outlandish theories for that too like eating while hanging off my bed ….

am upside-down, hot mess and lucky I never choked on anything… but I digress…)

This was where my love of ice coffee and Coffee Coolattas started. I drank them every day throughout high school and college. Then, I shifted to black coffee in my 20s until I discovered a non-fat creamer that I indulged in for way too long. When first pregnant with my son, I tried to give it up but the afternoon migraines were too intense so I would save my cup of Joe for after lunch.

Because of the breastfeeding elimination diet I did for TJ due to his allergies, I could not use my “fat-dairy’ creamer. (apparently no matter how artificial it was, it still contained dairy). 

Then, came my miscarriage a year later which led me to do a three day whole food cleanse where coffee was not allowed…

It was then that I just stopped for what I thought would be a week or two. Soon though, I found myself pregnant with Madison and felt more comfortable sticking to being coffee-free.

Nine months later right on my due date (I have very punctual kids…can’t say that about myself these days… but I digress again ), my daughter arrived. 

During those first hours following her birth, a migraine started and the nurse and doctor both recommended that I drink coffee.   So, I did and sure enough the headache went away but what I didn’t know yet… I was already hooked again.

During those first two months, I found myself waiting for that one cup of coffee as if my day and life depended on it. When I drank it, I could take on anything…. for that hour at least and then

crash!

Literally, I would crash. It was such a drastic shift in mood and energy level that I decided to challenge myself.   Did I really need this coffee? 

I am always up for a challenge so I took it on. This led to a terrible week of night sweats, exhausted days, and irritability.   It was truly a detox from one cup of coffee…(okay more than 1.5 cups or 2 at this point since my mug kept growing in size. One cup is one cup no matter the size, right?)

Anyways, that is when I finally faced the facts:

If my body had to detox from something like that, it was not meant to be.   

Therefore, I have been coffee free for 2.5 years now and don’t miss it.  I do still love the smell of coffee brewing in the morning though and I still have not given up the wine …. not so sure I will… I mean it’s much more pleasant to embrace the Friday mess of this house…

without feeling the need to clean or do laundry as I sip on a glass of Shiraz…

But once again I digress.

Store Bought Favorites

Oh how busy life gets! There is always something to prep, cook or bake for, but not always the time to do so. Since TJ’s diagnosis, more and more great companies have been creating delicious treats... aka tasty time savers.

*Of course, always make sure to check ingredients and labels every time to ensure it is also safe for you and your family. Check labels with each purchase as companies do change the recipe here and there. Better safe than sorry … so cliche but true.*

While TJ’s teachers always have a box of Oreos as his special treat in case we don’t know about a party or event at school, we ask for a monthly schedule at the start of each month to try to prevent that.  Therefore, during the crazy weeks where dinner time is late and bedtime is even later, we are blessed to have found such amazing products and trustworthy businesses.

Blissful Banana Bread

Who doesn’t love a good baked bread especially when it involves bananas. Here is one of our simple favorites.

 

Ingredients:

First Bowl:

1.5 cups of flour

1.5 teaspoon baking powder

1 teaspoon cinnamon

pinch of salt

Second Bowl:

2 mashed bananas

1/3 cup of applesauce

1/2 cups of sugar

1/4 cup cooking oil (We use melted coconut oil, but have used others.)

1/4 cup dairy free chocolate chips (optional but a favorite)

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a loaf pan. We use Earth’s Balance.
  3. Mix in all the dry ingredients in a large bowl and make a well in the middle of it.
  4. Mix the second set of ingredients in a separate bowl or even directly into the well of the first bowl.
  5. Then mix together everything thoroughly.
  6. Add in dairy free chocolate chips.
  7. Pour mixture into the greased pan.
  8. Bake for 45 minutes.  Test with a toothpick.
  9. Enjoy!

Notes:

  • We prefer Pyrex but have learned (the hard way) to be careful when taking out glass from the oven.  Do not place directly from the oven onto the cool surface like the counter.  It can explode!

Shake Up Your Morning

It was in September that I saw my OBGYN about intense ovulation and menstrual pain. It had been several months of this so I wanted answers. I started to assume it was the endometriosis my mom may have so “kindly” passed down to me.

After an ultrasound, I received a phone call from another doctor telling me that I had a cyst on my ovary the size of a baseball!

A BASEBALL! I freaked out… ain’t gonna lie… especially when they then instructed me that I should have blood work done to double check…cancer levels… That was it! I quickly lost it!

Then, the doctor went right into talking about having to monitor it for a few months and then discussed going on the pill or even surgery.  That was not a good night for me or my husband to say the least. (It was also the night I found out he would be traveling to Paris for business without me….double whammy!!)

After I gathered myself again, I turned to prayer, believing everything would be okay.  Instead, of my typical reaction of panic, panic and more panic.   I consciously chose to train my brain to believe that: I. WOULD. BE. TOTALLY. OKAY. AND. HEALTHY.

A week later, the blood work came back with the wonderful news that my inflammation number was in the normal range.   So now it was just waiting game until I would be rechecked in a couple months. Therefore, I reached out to a holistic doctor about what I could do. She gave some supplements to help decrease estrogen levels and also suggested lots of cruciferous vegetables and as many greens as possible. Sadly, she also recommended that I cut out alcohol and dairy for 30 days. Noooo not the wine!

So, I loaded up on broccoli and cauliflower in my lunches and dinners.  Riced cauliflower was my best friend in my stir frys, salads, and even soups. I already wasn’t eating dairy during the week, only on the weekends with pizza.  With liquor, I stopped the random glass of wine during the week, only a glass or two on the weekends.  But as far as the other greens…. how many greens could I actually eat? That is when I decided to play around with morning shakes, finding my favorite green one.

I called it my morning “Shake Up” or as my daughter calls it, a green “milk shake.”

And here it is… with some variations. I like to vary it up too.  My husband turned me into a creature of habit, or maybe I always was one.  Regardless, variety is important so I try my hardest to vary it up.

SHAKE IT UP RECIPE #1

  1. ice cubes (a couple handfuls)
  2. 2 Tablespoons almond butter
  3. 1 cup almond milk or Silk’s Protein Milk (almond, cashew, pea)
  4. 2 dates (You can add up to 4.  I keep it light for sugar purposes)
  5. 1 Tablespoon chia seeds
  6. 1 Tablespoon flax seeds
  7. 1 Tablespoon – a good sourced Cacao powder (optional)
  8. A teaspoon of cinnamon (optional)
  9. a cup of spinach or kale (I usually stick to spinach although lately I’m on a kale kick)
  10. 1-2 stalks of celery or even cucumber
  11. Maca powder (optional)
  12. Organic protein powder (optional)

Directions:  Combine and blend well. We use a Vitamix to blend. (It was by far one of my best purchases as far as kitchen items.)

Two months later, when I was retested, the cyst was almost completely undetectable.  Thank you God! Thank you for shakin’ it up and making my faith grow even more.  Thank you for those morning shakes that kick start my days right, even as we rush out of the house with the Vitamix still dirty in the sink.
